This dip is full of flavor and very easy to throw together which makes it a favorite for entertaining at our house. Plus, it is made with all vegetables which means it must be healthy, right?
To get the right texture, it is very important to use ripe avocados which are brown and slightly soft to the touch. The avocados in my market are almost always under ripe, so I buy them a few days before I plan on making guacamole to give them a chance to ripen up.
4 ripe Haas avocados
3 tablespoons freshly squeezed lemon juice (1 lemon)
8 dashes hot pepper sauce (omit if you prefer a mild guacamole)
1/2 cup small-diced red onion (1 small onion)
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon black pepper
1 medium tomato, seeded, and small-diced
Cut the avocados in 1/2, remove the pits, pull off the peels and place in a large bowl. Add the remaining ingredients and mash everything together with your hands.
Serve with tortilla chips for dipping. If not serving immediately, cover tightly with plastic wrap and refrigerate.
