Homemade Granola

This granola is a family favorite. The kids love it over yogurt as a breakfast, lunch or snack. It is also great with berries, milk or over ice cream.

The recipe is very simple as granola recipes go, but sometimes less is more. The combination of honey and coconut is simply delicious. I sometimes make this granola with nuts, substituting one cup of sliced almonds for one of the cups of coconut in the recipe below.

Homemade Granola

5 cups old-fashioned rolled oats
3 cups sweetened, shredded coconut
3/4 cup vegetable oil
1/2 cup good honey
1 cup dried cranberries, raisins or other dried fruit (optional)

Preheat the oven to 350 degrees (do not use convection bake setting).

In a large bowl combine the oats, coconut, oil and honey. Mix well.

Pour onto a 13x18-inch baking sheet. Bake for about 30 minutes, stirring after 15 minutes, until the mixture turns an even golden brown.

Remove the granola from the oven and allow to cool, stirring occasionally. Add the cranberries or raisins if using. Store the cooled granola in an airtight container.
