Pan Seared Steaks

2 steaks with bone (about 1 inch thick)
Salt
Pepper
Olive Oil

Sprinkle the steaks with salt and pepper on both sides and allow them to rest at room temperature for 15 minutes.

Heat a thin layer of olive oil in a sauté pan over high heat until it is almost smoking. Sear the steaks for about 1 minute on each side. Reduce the heat to low and cook an additional 5 minutes per side.
